Under processing of a hot smoked mackerel (fig.1). The flesh in the red area along the backbone is virtually raw. Such under processing may lead not only to poor quality and rapid spoilage but also to public health problems.

Nedokonalé zpracování uzené makrely (obr.1). Červené maso v oblasti páteře je viditelně syrové. Takové zpracování může vést nejen k nízké kvalitě a rychlému znehodnocení výrobku, ale také k ohrožení veřejného zdraví.
