A variant of „novelty“cheese is Roulé, a soft cheese with a topping such as herbs rolled and sliced. The degree of additional handling involved leads to an enhanced risk of contamination and mould development on the exterior of the Roulé is shown. Note that development of the mould was suppressed to some extent by the over wrapping film. The cheese was purchased in this condition in the display cabinet of a large department store. Final spoiling is shown (fig.1).

Sýr Roulé, měkký typ sýra s bylinkami na povrchu. Stupeň dalšího zpracování vede ke zvýšenému riziku kontaminace a rozvoji plísně na povrchu, jež je patrna na obrázku 1. Všimněte si, že rozvoj plísně byl do určité míry potlačen balící fólií. Tento sýr byl zakoupen v tomto stavu v jednom z velkých obchodních center.
